Ingredients

  • 2/3 cup shortening
  • 2 2/3 cups sugar
  • 4 eggs
  • 2/3 cup water
  • 2 cups pumpkin
  • 3 1/3 cups flour
  • 1/2 teaspoon baking powder
  • 2 teaspoons soda
  • 1 1/2 teaspoons salt
  • 1 teaspoon cinnamon
  • 1 teaspoon cloves
  • 1 cup chopped pecans

Instructions

  1. Wash and dry the canning jars.
  2. Use 8 pint-sized wide-mouth canning jars or 5 to 6 wide-mouth pint and a half jars.
  3. Grease the jars well.
  4. Preheat oven to 325°F (163°C).
  5. Cream shortening and sugar; add eggs and water, beating well.
  6. Add pumpkin and mix thoroughly.
  7. In a separate bowl, combine dry ingredients: flour, baking powder, soda, salt, cinnamon, and cloves.
  8. Stir dry ingredients into pumpkin mixture with a spoon.
  9. Add chopped pecans if desired.
  10. Fill each jar halfway full with batter.
  11. Bake for 45 to 55 minutes until a toothpick inserted in the center comes out clean.
  12. Remove jars one at a time from the oven.
  13. Put a scalded lid on each jar and seal.
