Ingredients

  • 1 1/2 c. vegetable oil
  • 1/2 c. packed brown sugar
  • 3 c. all-purpose flour
  • 1/2 tsp. ground nutmeg
  • 1/2 tsp. salt
  • 1 c. walnuts
  • 1 1/2 c. sugar
  • 3 eggs
  • 2 tsp. cinnamon
  • 1 tsp. soda
  • 3 1/2 c. diced peeled apples
  • 2 tsp. vanilla

Instructions

  1. In a mixing bowl, combine vegetable oil and brown sugar.
  2. Add eggs one at a time, beating well after each addition.
  3. Combine all-purpose flour, ground nutmeg, salt, cinnamon, and baking soda in a separate bowl.
  4. Add dry ingredients to the wet mixture and stir well.
  5. Fold in diced peeled apples, walnuts, and vanilla extract.
  6. Pour the batter into a greased and floured 10-inch tube pan.
  7. Bake at 325°F (160°C) for 1 1/2 hours or until a toothpick inserted in the center comes out clean.
  8. Cool the cake in the pan for 10 minutes.
  9. Remove from pan and transfer to a wire rack to cool completely.
