Carrot halva is a rich, sweet Indian dessert combining grated carrots, brown sugar, condensed milk, and fragrant coconut, perfect for festive occasions or as a comforting treat.

Ingredients

  • 2 lb. raw carrots, grated
  • 1 lb. brown sugar
  • 14 oz. can condensed milk
  • 1/2 c. water
  • 1/2 lb. butter or margarine
  • 1/2 c. raisins
  • 1/2 c. grated coconut

Instructions

  1. Mix grated carrots, brown sugar, condensed milk, and water in a heavy pan.
  2. Boil the mixture until almost dry, stirring constantly.
  3. Add butter and cook again until almost dry.
  4. Stir in raisins and grated coconut.
  5. Spread the mixture in a shallow greased pan and refrigerate.
  6. Cut into squares when cold and serve.
