Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 tablespoons oil
  • 1 egg
  • 1/4 cup skim milk
  • 1 cup grated carrot
  • 1 (8 oz.) can crushed pineapple

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix together flours, sugar, baking powder, baking soda, nutmeg, cinnamon, and salt in a bowl.
  3. In a separate bowl, combine oil, egg, milk, grated carrot, crushed pineapple with juice.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Spoon the batter into sprayed muffin pans.
  6. Bake for 20 to 25 minutes until a toothpick inserted in the center comes out clean.
