Carrot Tzimmes

Ingredients

  • 5 beef or lamb bones
  • 4 c. water (add more when needed)
  • kosher salt
  • freshly ground pepper
  • 1 large onion, chopped
  • 1 lb. carrots
  • 1/2 lb. sweet or white potatoes
  • 10 to 12 prunes (optional)
  • 1 Tbsp. sugar
  • 1/2 recipe Knaidlach (optional)

Instructions

  1. Cook bones in water for at least 1 hour with salt, pepper and onion.
  2. Skim fat off top.
  3. Peel and slice carrots.
  4. Peel and cut potatoes.
  5. Add prunes and sugar to pot.
  6. If Knaidlach are used, place on bottom of pot between bones in the liquid.
  7. Then, add all vegetables.
  8. Cover tightly and cook all together for at least 1 hour over low heat.
  9. Serves 8.
