Ingredients

  • 3 to 4 lb. beef pot roast
  • 3 Tbsp. shortening
  • 1/4 c. soy sauce
  • 3/4 c. water
  • 1/4 tsp. pepper
  • 1/4 tsp. ginger
  • 1 medium onion, sliced
  • 9 oz. can pineapple chunks
  • 4 oz. can mushrooms
  • 1/3 c. sliced celery
  • 2 Tbsp. flour

Instructions

  1. Brown the beef pot roast in shortening in a Dutch oven.
  2. Pour off the drippings, then add soy sauce, 1/2 cup water, pepper, ginger, and sliced onion.
  3. Cover tightly and cook slowly for 3 hours or until the roast is tender.
  4. Drain the pineapple chunks; combine with the canned mushrooms and sliced celery.
  5. Add the pineapple mixture to the roast in the Dutch oven.
  6. Cook for an additional 20 minutes.
  7. Remove the roast to a heated platter.
  8. Mix the remaining water with the flour to create a slurry, then add to the liquid in the pan.
  9. Cook, stirring constantly, until the sauce thickens.
  10. Serve the roast with the thickened sauce.
