Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup margarine, softened
  • 1 teaspoon vanilla
  • 1 cup white sugar
  • 2 large eggs
  • 2 teaspoons grated orange rind
  • 1 cup grated carrot
  • 1 cup grated zucchini
  • 1 cup chopped walnuts

Instructions

  1. Cream margarine with sugar.
  2. Add eggs, vanilla, and grated orange rind; beat well.
  3. Sift together all-purpose flour, whole wheat flour, baking powder, cinnamon, and salt.
  4. Gradually add dry ingredients to the creamed mixture, mixing until just combined.
  5. Fold in grated carrot, grated zucchini, and chopped walnuts.
  6. Pour batter into a greased baking pan.
  7. Bake at 350°F (175°C) for 35 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool before frosting with cream cheese icing.
