- Boil the cut carrots in salted water for 15 to 20 minutes or until tender.
- Drain the carrots and put them in a blender or grate them.
- Stir in whipping cream, parmesan cheese, chopped onion, and seasonings such as pepper and salt.
- Pour the mixture into a large buttered casserole dish.
- Place pecan halves over the top of the casserole.
- Bake at 350°F (175°C) for 45 minutes to 1 hour until heated through and golden on top.
