Ingredients

  • 1/2 large head lettuce
  • 1/2 red onion (medium)
  • 8 baby carrots
  • 8 fresh sliced mushrooms
  • a little shredded red cabbage
  • 1 large tomato
  • 1 ripe avocado
  • 1 (2 1/4 oz.) can sliced black olives
  • 2 lb. chicken tenders
  • 12 oz. Co-Jack cheese
  • 1 1/3 cups cashews

Instructions

  1. Use 4 large bowls.
  2. Divide the ingredients: 1/2 large head lettuce, 1/2 medium red onion, 8 baby carrots cut in 4ths lengthwise, 8 sliced fresh mushrooms, shredded red cabbage, 1 large tomato chopped, 1 ripe avocado chopped, 1 can sliced black olives, 2 lb. chicken tenders cooked and shredded, 12 oz. Co-Jack cheese shredded, and 1 1/3 cups cashews evenly into the bowls.
