Ingredients

  • 3 cups chicken broth
  • 1 1/2 to 2 cups fresh crappie fillets
  • 2 medium carrots, chopped
  • 2 cups raw potatoes
  • 1/4 cup chopped parsley
  • 1/3 cup chopped celery
  • 1 small onion, chopped
  • 1/4 cup melted butter
  • 2 tablespoons flour
  • 1/2 cup evaporated milk
  • salt and pepper to taste

Instructions

  1. Combine all ingredients except fish, butter, flour, and milk in a large pot and bring to a boil.
  2. While the soup is boiling, melt butter in a nonstick skillet and sauté the crappie fillets until they are white and firm.
  3. Add the cooked fish to the boiling pot.
  4. In the skillet with remaining butter, stir in flour and cook briefly to make a roux.
  5. Gradually add evaporated milk, stirring constantly to create a sauce.
  6. Season with salt and pepper to taste, then serve the chowder hot.
