Ingredients

  • 1 cup stone-ground corn meal
  • 1/2 teaspoon soda
  • 1 tablespoon honey
  • 1/2 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 1 egg
  • 3 tablespoons oil

Instructions

  1. Heat oil in a pan in the oven while mixing the other ingredients.
  2. Mix all ingredients except the oil in a bowl.
  3. Add the heated oil to the mixture last and stir to combine.
  4. Pour the batter into an 8 or 9-inch pan.
  5. Bake in a 425°F oven for about 20 minutes until golden brown and cooked through.
