Ingredients

  • 1 3/4 cups flour, divided
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 4 egg whites
  • 2 tablespoons white sugar
  • 2/3 cup applesauce
  • 1/4 cup plain yogurt
  • 1 teaspoon lemon zest
  • 2 cups assorted berries (blueberries, blackberries, raspberries)
  • 1/4 cup brown sugar
  • 2 tablespoons margarine

Instructions

  1. Spray a 10-inch round spring-form pan with cooking spray.
  2. Combine 1 1/2 cups flour, baking powder, baking soda, and salt in a bowl.
  3. In a large bowl, whisk egg whites, sugar, applesauce, yogurt, and lemon zest until smooth.
  4. Add the flour mixture all at once to the wet ingredients and stir until blended.
  5. Pour the batter into the prepared pan.
  6. Distribute the assorted berries on top of the batter.
  7. In a small bowl, combine the remaining 1/4 cup flour and brown sugar.
  8. Cut in the margarine until the mixture is evenly blended.
  9. Sprinkle the topping over the berries and batter.
  10. Bake at 350°F (175°C) for 50 to 55 minutes.
  11. Cool for 20 minutes before serving.
