Ingredients

  • 1 cup cornmeal
  • 1 cup flour
  • 6 large eggs
  • 1 stick butter or oleo
  • 2 cups water
  • 2 cups milk
  • 1/4 teaspoon coconut extract
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 1/8 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 cup brown sugar

Instructions

  1. Sift dry ingredients (cornmeal, flour, cinnamon, baking soda, salt, brown sugar) together and put aside.
  2. Melt butter and beat well with eggs.
  3. Mix in sugar, water, milk, coconut extract, and vanilla to the egg mixture.
  4. Blend the wet mixture with the dry ingredients until smooth.
  5. Pour into an ungreased 9 x 13-inch glass pan.
  6. Bake at 350°F for 1 hour and 10 minutes until lightly brown and set as it cools.
