Charleston Soup

- Brown the beef shank and marrow bones in the oven.
- Place the browned meat and bones in a large pot.
- Add unpeeled onion with cloves stuck in it, tomatoes, and water to the pot.
- Cook for 1 1/2 hours.
- Remove the meat and onion from the pot.
- Discard the onion.
- Add chopped vegetables and garlic to the broth.
- Let simmer for 5 to 6 hours, seasoning as you add vegetables.
- Add 1/4 teaspoon thyme during the last hour of cooking.
- Remove meat from bones and marrow, then cut into pieces and add to the soup.
- Cook for an additional 30 minutes.
- If additional liquid is needed, add tomato juice.
