Ingredients

  • 3 lb beef shank and marrow bones
  • cabbage
  • rutabaga, diced
  • carrots
  • turnips, tops and bottoms
  • mustard greens
  • collards
  • celery
  • garlic button
  • 1 onion
  • 2 cloves
  • 1 qt tomatoes
  • 6 qt water
  • salt and pepper

Instructions

  1. Brown the beef shank and marrow bones in the oven.
  2. Place the browned meat and bones in a large pot.
  3. Add unpeeled onion with cloves stuck in it, tomatoes, and water to the pot.
  4. Cook for 1 1/2 hours.
  5. Remove the meat and onion from the pot.
  6. Discard the onion.
  7. Add chopped vegetables and garlic to the broth.
  8. Let simmer for 5 to 6 hours, seasoning as you add vegetables.
  9. Add 1/4 teaspoon thyme during the last hour of cooking.
  10. Remove meat from bones and marrow, then cut into pieces and add to the soup.
  11. Cook for an additional 30 minutes.
  12. If additional liquid is needed, add tomato juice.
