Chaurice Sausage Cornbread Dressing

Ingredients
- 1 lb. cornbread, crumbled ⓘ
- 1 lb. French bread, cut into cubes ⓘ
- 1/2 lb. butter
- 1 c. diced onion ⓘ
- 1 c. diced celery ⓘ
- 1/2 Tbsp. minced garlic ⓘ
- 4 oz. chaurice sausage, chopped ⓘ
- 1/4 c. fresh chopped parsley
- 8 mushrooms, sliced ⓘ
- 4 Tbsp. sage, ground ⓘ
- 1 1/2 Tbsp. marjoram leaves ⓘ
- 1 tsp. thyme ⓘ
- 1 Tbsp. poultry seasoning ⓘ
- 1/2 tsp. minced rosemary ⓘ
- 1/2 tsp. oregano leaf ⓘ
- 1/4 tsp. white pepper ⓘ
- 2 tsp. salt ⓘ
- 1 1/2 c. chicken or turkey stock ⓘ
- 2 eggs, beaten
Instructions
- Saute the diced onion, diced celery, and sliced mushrooms in butter until half cooked.
- Add the minced garlic, sage, marjoram, thyme, poultry seasoning, minced rosemary, oregano, white pepper, and salt; cook for another minute.
- Add the chopped chaurice sausage and stir well; cook until browned.
- In a large mixing bowl, blend the crumbled cornbread and bread cubes.
- Pour the sautéed vegetables, herbs, and sausage over the bread mixture.
- Add the beaten eggs and chicken or turkey stock; stir well to combine.
- Transfer the mixture into buttered aluminum half pans.
- Bake at 375°F (190°C) for 1 hour until golden and heated through.
