Ingredients

  • 2 c. yellow cornmeal
  • 1/2 c. flour
  • 1/2 c. sugar
  • 1 tsp. salt
  • 1 tsp. soda
  • 1/4 tsp. baking powder
  • 1 c. grated sharp Cheddar cheese
  • 2 c. buttermilk
  • 1/4 c. melted butter
  • 1/4 c. grated onion

Instructions

  1. Combine the dry ingredients: cornmeal, flour, sugar, salt, soda, and baking powder in a mixing bowl.
  2. Add grated onion to the dry mixture and mix well.
  3. Pour in the buttermilk and melted butter, stirring gently to combine; do not beat the batter.
  4. Pour the batter into a greased iron skillet.
  5. Bake at 350°F (175°C) for 30 minutes or until golden brown and a toothpick inserted in the center comes out clean.
