Ingredients

  • 1 tsp. oil
  • 1/2 c. chopped green onions
  • 1/2 c. diced bell pepper
  • 1 1/2 oz. shredded Cheddar cheese
  • 1/2 c. thawed frozen whole kernel corn
  • 1/3 c. plus 2 tsp. self-rising flour
  • 1/2 c. buttermilk
  • 2 eggs
  • 2 egg whites

Instructions

  1. In a small nonstick skillet, heat the oil.
  2. Add green onions and bell pepper, and cook over medium-high heat for about 1 minute.
  3. Remove from heat and set aside.
  4. In a mixing bowl, combine the shredded Cheddar cheese, thawed corn, self-rising flour, buttermilk, and egg yolks.
  5. In a separate bowl, beat the egg whites until stiff peaks form.
  6. Gently fold the egg whites into the corn mixture until just combined.
  7. Heat a skillet or griddle over medium heat and lightly oil it.
  8. Drop spoonfuls of batter onto the hot skillet and cook until golden brown on both sides, about 2-3 minutes per side.
  9. Serve warm.
