- In a medium saucepan, cook zucchini, covered, in a small amount of boiling water for 3 to 5 minutes or until tender.
- Drain well and spread evenly into an 8 x 1 1/2-inch round baking dish.
- In a bowl, combine sour cream, egg yolk, flour, onion salt, and pepper.
- Stir in shredded Cheddar cheese.
- In a separate bowl, beat egg white until stiff peaks form.
- Gently fold beaten egg white into the sour cream mixture.
- Spoon the mixture atop the cooked zucchini in the baking dish.
- In a small bowl, combine bread crumbs and melted margarine.
- Sprinkle the bread crumb mixture over the egg mixture.
- Bake in a 350°F (175°C) oven for 20 to 25 minutes or until golden.
