Ingredients

  • 1 lb. zucchini, sliced 1/4-inch thick
  • 1/2 cup dairy sour cream
  • 1 beaten egg yolk
  • 1 tablespoon flour
  • 1/4 teaspoon onion salt
  • 1/8 teaspoon pepper
  • 3/4 cup shredded Cheddar cheese
  • 1 egg white
  • 2 tablespoons seasoned fine dry bread crumbs
  • 1 teaspoon margarine, melted

Instructions

  1. In a medium saucepan, cook zucchini, covered, in a small amount of boiling water for 3 to 5 minutes or until tender.
  2. Drain well and spread evenly into an 8 x 1 1/2-inch round baking dish.
  3. In a bowl, combine sour cream, egg yolk, flour, onion salt, and pepper.
  4. Stir in shredded Cheddar cheese.
  5. In a separate bowl, beat egg white until stiff peaks form.
  6. Gently fold beaten egg white into the sour cream mixture.
  7. Spoon the mixture atop the cooked zucchini in the baking dish.
  8. In a small bowl, combine bread crumbs and melted margarine.
  9. Sprinkle the bread crumb mixture over the egg mixture.
  10. Bake in a 350°F (175°C) oven for 20 to 25 minutes or until golden.
