Ingredients

  • 2 c. lightly salted sweet onions, chopped medium
  • 2 sticks butter, melted
  • 3 c. scalded milk
  • 4 c. crushed saltines
  • 1/2 tsp. curry powder
  • 1 tsp. salt
  • 1 1/2 c. grated Cheddar cheese
  • paprika
  • 3 eggs, lightly beaten
  • Parmesan cheese
  • dash of red pepper

Instructions

  1. Toss crushed saltines with melted butter to coat well.
  2. Add curry powder to the cracker mixture.
  3. Line an 11 x 16-inch pan with three-quarters of the cracker mixture.
  4. Spread chopped sweet onions over the cracker layer.
  5. Sprinkle grated Cheddar cheese over the onions.
  6. Combine scalded milk, lightly beaten eggs, salt, and red pepper.
  7. Pour the milk mixture over the layered ingredients in the pan.
  8. Sprinkle the remaining cracker mixture on top.
  9. Top with a light layer of Parmesan cheese and paprika.
  10. Bake in a preheated 375°F oven for 25 to 30 minutes or until set.
  11. Cut into squares and serve.
