Cheese Cache Chicken features tender chicken breasts filled with Monterey Jack cheese and sage, coated in eggs and Parmesan, then crisped and baked to perfection. A flavorful, cheesy dish perfect for entertaining or family dinners.

Ingredients

  • 2 whole chicken breasts, skinned, boned and halved
  • 4 pieces Monterey Jack cheese, cut 1/4 x 1 1/2 x 3-inches
  • 1/2 tsp dried sage
  • 2 eggs
  • 1 tsp Parmesan cheese
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 Tbsp parsley
  • 1/4 cup clarified butter

Instructions

  1. Cut a pocket in each chicken breast by making a 2-inch deep slit on the side.
  2. Place a strip of Monterey Jack cheese and dried sage inside each pocket.
  3. Chill the stuffed chicken breasts.
  4. Beat eggs, Parmesan cheese, salt, pepper, and parsley together to make the batter.
  5. Roll each chicken breast in flour, then dip in the egg batter.
  6. Heat clarified butter in a skillet.
  7. Saute the chicken breasts until crispy and golden, turning with a spatula.
  8. Transfer the chicken to a baking dish and bake in a preheated 375°F oven for 8 to 10 minutes.
  9. Garnish with parsley and lemon wedges before serving.
