Ingredients

  • 1 small onion, chopped
  • 2 Tbsp. butter
  • 3 Tbsp. flour
  • 2 c. milk
  • 1 c. coarsely grated domestic cheese
  • salt and pepper to taste
  • 1 chopped pimiento
  • 1 tsp. sugar
  • pinch of marjoram
  • 2 to 2 1/2 c. Niblets corn
  • 2 eggs, slightly beaten
  • bread crumbs

Instructions

  1. Saute chopped onion in butter until translucent.
  2. Blend in flour and cook for a minute.
  3. Gradually add milk and grated cheese, stirring constantly until smooth and thickened.
  4. Add salt, pepper, pimiento, sugar, and marjoram to the mixture.
  5. Stir in corn and slightly beaten eggs until well combined.
  6. Pour the mixture into a shallow buttered casserole dish.
  7. Sprinkle bread crumbs over the top and dot with additional butter.
  8. Bake at 350°F (175°C) for 35 minutes until golden and bubbly.
