Ingredients

  • 1 1/2 lb. sharp cheese, grated
  • 1/2 lb. blue cheese
  • 1 tsp. dry mustard
  • 2 Tbsp. soft margarine
  • 1 tsp. Worcestershire sauce
  • 2 tsp. grated onion
  • 1 (12 oz.) bottle beer
  • 1 (3 to 5 lb.) loaf round rye or dill bread
  • paprika
  • parsley

Instructions

  1. Put the first six ingredients in a bowl to soften for about 30 minutes.
  2. Meanwhile, take the round bread and slice off the top. Hollow out the bread.
  3. Save the top and inside of the bread to place around the bowl for dipping.
  4. When the cheese is soft, slowly add the beer and beat until smooth and fluffy.
  5. Pour the cheese mixture into the bread bowl and refrigerate.
  6. Serve on a round bread board or platter with reserved bread, crackers, and party bread, garnished with paprika and parsley.

Tips & Substitutions

For a creamier texture, consider adding a splash of cream cheese or sour cream to the cheese mixture. If you prefer a milder flavor, you can substitute the sharp cheese with a medium cheddar. Ensure that the cheese is at room temperature before mixing to achieve a smooth consistency. If you're looking for a non-alcoholic version, replace the beer with vegetable broth or sparkling water.

Serving Suggestions

Serve the cheese dip in the hollowed-out bread bowl surrounded by the reserved bread pieces, crackers, and fresh vegetables for dipping. This dish pairs beautifully with Lots Of Macaroni Salad as a refreshing side. Consider adding a selection of pickles or olives to enhance the flavor profile and provide a nice contrast to the richness of the dip.

Storage & Reheating

Store any leftover cheese dip in an airtight container in the refrigerator for up to three days. To reheat, transfer the dip to a microwave-safe bowl and heat in short bursts, stirring in between, until warmed through. You can also reheat it gently on the stovetop over low heat, stirring constantly to avoid burning.
