Ingredients

  • 2 c. broccoli flowerets
  • 1 c. carrot slices
  • 1/4 c. margarine
  • 2 c. summer squash slices
  • 1 lb. Velveeta, cubed
  • 3/4 c. half and half cream
  • 1 tsp. oregano
  • 1/4 lb. pepperoni, chopped

Instructions

  1. In a large skillet, stir-fry carrots and margarine.
  2. Add broccoli and stir-fry.
  3. Add summer squash last and stir-fry until crunchy yet tender.
  4. In a saucepan, melt Velveeta, half and half, and oregano.
  5. Stir until cheese is melted and smooth.
  6. Layer vegetables, pepperoni, and noodles in a casserole dish.
  7. Pour the cheese mixture over the layered ingredients.
  8. Mix lightly to combine and bake until heated through.
