Ingredients

  • 1/4 cup reduced fat margarine
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 1 cup skim milk
  • 1 cup shredded reduced fat cheddar
  • 3 large egg whites
  • 3 large egg yolks
  • 1/4 teaspoon cream of tartar

Instructions

  1. Melt butter in a large saucepan over medium heat.
  2. Stir in all-purpose flour, salt, and cayenne pepper.
  3. Cook until smooth and bubbly.
  4. Stir in milk and boil for 1 minute, stirring constantly.
  5. Stir in shredded reduced fat cheddar and heat until melted.
  6. Remove from heat and set aside.
  7. Beat egg yolks on high with an electric mixer for 3 minutes.
  8. Stir the beaten egg yolks into the cheese mixture and set aside.
  9. Beat egg whites and cream of tartar with an electric mixer on high until stiff.
  10. Fold egg whites into the cheese mixture carefully.
  11. Pour into a well-greased 1-quart soufflé dish.
  12. Bake at 350°F (175°C) for one hour.
  13. Serve immediately.
