Ingredients

  • 10 oz chopped spinach
  • 1/2 cup chopped onion
  • 2 slightly beaten eggs
  • 1/2 cup Parmesan cheese
  • 1/2 cup shredded Cheddar
  • 1/2 cup blue cheese salad dressing
  • 1/4 cup melted butter
  • 1/8 teaspoon garlic powder
  • 8 1/2 oz corn muffin mix

Instructions

  1. Combine the chopped spinach and chopped onion.
  2. Cook the spinach according to package directions.
  3. Drain all liquid from the cooked spinach.
  4. In a bowl, combine the beaten eggs, Parmesan cheese, shredded Cheddar, blue cheese salad dressing, melted butter, and garlic powder.
  5. Add the drained spinach mixture and the corn muffin mix to the bowl and stir well.
  6. Cover the mixture and chill in the refrigerator for one hour.
  7. Form the chilled batter into 1-inch balls and place them on an ungreased cookie sheet.
  8. Bake in a 350°F oven for 10 to 12 minutes until golden and heated through.
