Ingredients

  • 2 cups sliced carrots
  • 1 cup cut green beans
  • 2 tablespoons margarine
  • 1 1/4 cups thinly sliced onions
  • 1/2 teaspoon basil leaves
  • 1/2 teaspoon garlic salt
  • 1/8 teaspoon pepper
  • 4 1/2 ounces sliced mushrooms, drained
  • 2 medium tomatoes, cut in wedges
  • 4 ounces shredded Cheddar or Mozzarella cheese

Instructions

  1. Cook carrots and green beans until tender and drain.
  2. Place the cooked vegetables in a 2-quart casserole dish.
  3. In a skillet, melt the margarine over medium heat.
  4. Add onions, basil, garlic salt, pepper, and drained mushrooms; sauté until the onions are tender.
  5. Spoon the onion mixture over the vegetables in the casserole.
  6. Arrange tomato wedges on top of the onion mixture.
  7. Sprinkle shredded cheese evenly over the top.
  8. Bake at 350°F (175°C) for 10 to 15 minutes until cheese is melted and bubbly.
