Ingredients

  • 4 tbsp chopped onion
  • 2 tbsp margarine or butter
  • 2 cups frozen loose pack corn
  • 1 cup chopped broccoli
  • 1/2 cup shredded carrot
  • 1/2 cup water
  • 2 cans cream of potato soup
  • 2 cups milk
  • 1/2 cup shredded cheddar cheese
  • 2 oz provolone cheese
  • Dash of pepper

Instructions

  1. Saute chopped onion in margarine or butter until translucent, do not brown.
  2. Add chopped broccoli, frozen corn, shredded carrot, and water. Bring to a boil, then reduce heat and simmer covered for 10 minutes or until vegetables are tender.
  3. Stir in cream of potato soup, milk, shredded cheddar cheese, and provolone cheese.
  4. Heat through until the cheeses are melted and the soup is hot.
  5. Add canned corn after other vegetables are cooked and heat through.
