Cheesy-Bacon Potatoes

- Wash and dry the potatoes.
- Pierce each potato with a fork and bake at 425°F (220°C) for 50 to 60 minutes or until tender.
- Meanwhile, cook the bacon in a skillet until crispy.
- Cool the bacon, then crumble it.
- In 2 tablespoons of bacon drippings, sauté the chopped onion and green pepper until softened.
- Add the sliced mushrooms to the sauté and cook until all vegetables are tender.
- Set the sautéed vegetables aside.
- Once the potatoes are baked, let them cool slightly, then cut a slit down the center and scoop out some of the insides into a bowl.
- Mix the potato insides with the grated cheddar cheese, milk, butter, beaten egg, and salt.
- Fold in the sautéed vegetables and crumbled bacon.
- Spoon the mixture back into the potato shells.
- Top with additional cheese if desired.
- Bake at 375°F (190°C) for about 15 minutes or until cheese is melted and bubbly.
