Cheesy-Bacon Potatoes

Ingredients

  • 4 large baking potatoes
  • 4 strips bacon
  • 1/3 cup chopped onion
  • 1/3 cup chopped green pepper
  • 2 cups sliced mushrooms
  • 1 1/2 cups grated Cheddar cheese
  • 2 tablespoons milk
  • 2 tablespoons butter or margarine
  • 1 egg, slightly beaten
  • 1 teaspoon salt

Instructions

  1. Wash and dry the potatoes.
  2. Pierce each potato with a fork and bake at 425°F (220°C) for 50 to 60 minutes or until tender.
  3. Meanwhile, cook the bacon in a skillet until crispy.
  4. Cool the bacon, then crumble it.
  5. In 2 tablespoons of bacon drippings, sauté the chopped onion and green pepper until softened.
  6. Add the sliced mushrooms to the sauté and cook until all vegetables are tender.
  7. Set the sautéed vegetables aside.
  8. Once the potatoes are baked, let them cool slightly, then cut a slit down the center and scoop out some of the insides into a bowl.
  9. Mix the potato insides with the grated cheddar cheese, milk, butter, beaten egg, and salt.
  10. Fold in the sautéed vegetables and crumbled bacon.
  11. Spoon the mixture back into the potato shells.
  12. Top with additional cheese if desired.
  13. Bake at 375°F (190°C) for about 15 minutes or until cheese is melted and bubbly.
