Tips & Substitutions

For a creamier texture, consider blending a portion of the soup before adding the cheese. You can also substitute the Fontina and Provolone with other cheeses like Gruyère or Cheddar if you prefer. If you like a bit of heat, add a pinch of cayenne pepper. Use fresh spinach if you have it; just sauté it until wilted before adding it to the soup.

Serving Suggestions

This cheesy spinach soup is perfect as a hearty lunch or dinner. Serve it with crusty bread or a side salad for a complete meal. It pairs beautifully with Oven Baked Chicken Fingers (Low-Fat) for a satisfying family dinner. For an extra touch, garnish each bowl with additional croutons and a sprinkle of fresh herbs.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, slowly warm the soup on the stove over low heat, stirring occasionally to prevent it from sticking to the bottom. If the soup thickens too much, add a little bit of milk or broth to reach your desired consistency.

Frequently Asked Questions

Can I use fresh spinach instead of frozen?

Can I make this soup ahead of time?

Absolutely! This soup can be made ahead of time and stored in the refrigerator. Just be sure to reheat it gently on the stove to avoid curdling the milk. It’s a great option for meal prepping or for serving to guests during busy weeks.
