Ingredients

  • 1 1/2 chicken cutlets
  • flour
  • salt
  • pepper
  • 6 cloves garlic
  • 1/4 cup balsamic vinegar
  • 3/4 cup chicken broth
  • 1/4 teaspoon thyme
  • 1 bay leaf
  • 2 tablespoons olive oil

Instructions

  1. Dredge chicken cutlets in seasoned flour mixture.
  2. Fry chicken in approximately 2 tablespoons of olive oil until browned.
  3. Add minced garlic, balsamic vinegar, chicken broth, thyme, and bay leaf to the pan.
  4. Cook over moderate heat for 15 minutes.
  5. Remove chicken from the pan and set aside.
  6. Add butter to the pan and sauté sliced mushrooms for 5 minutes.
  7. Pour mushroom mixture over the chicken and serve.
