Creamy and cheesy zucchini casserole with carrots and stuffing, perfect for family dinners or potlucks, offering comforting flavors with a crispy topping.

Ingredients

  • 6 cups grated zucchini
  • 1/4 cup chopped onion
  • 1 can cream of mushroom soup
  • 2 cups grated Cheddar cheese
  • 1 cup sour cream
  • 1 cup shredded carrots
  • 1 package (8 oz.) Pepperidge Farm stuffing mix
  • 1/2 cup melted oleo

Instructions

  1. Cook zucchini and chopped onion in boiling water for 5 minutes and drain.
  2. Combine cream of mushroom soup, grated Cheddar cheese, sour cream, and shredded carrots in a bowl.
  3. Fold the cooked zucchini and onion into the soup mixture.
  4. Mix the stuffing mix with melted oleo.
  5. Spread half of the stuffing mixture on the bottom of the prepared pan.
  6. Place the zucchini mixture on top of the stuffing layer.
  7. Cover the zucchini mixture with the remaining stuffing.
  8. Bake at 350°F for 25 to 30 minutes until heated through and golden on top.
