A vibrant baked cherry tomato dish with cheesy topping, perfect for casual dinners or gatherings, combining fresh vegetables with bold seasonings and crispy bread crumbs.

Ingredients

  • 2 pt. cherry tomatoes
  • 1 onion
  • 1 bell pepper
  • 1 tsp. chili powder
  • 1 tsp. oregano
  • 1 c. bread crumbs
  • 2 Tbsp. butter
  • 1 1/2 c. sharp Cheddar cheese
  • salt and pepper to taste

Instructions

  1. Wash cherry tomatoes and let dry or slice and drain them. Butter an 8 x 12-inch casserole dish.
  2. Arrange the tomatoes evenly on the bottom of the dish. Cover with chopped onion and chopped bell pepper.
  3. Mix chili powder, oregano, and bread crumbs; sprinkle over the tomatoes.
  4. Dot the top with butter slices and cover with shredded Cheddar cheese.
  5. Bake uncovered for 30 minutes at 350°F (175°C).
