Ingredients

  • 2 egg substitute
  • 2 tsp. baking powder
  • 2/3 c. reconstituted nonfat dry milk
  • 1/2 c. nonfat plain yogurt
  • 1 c. canned or fresh fruit
  • 1/3 c. unsweetened applesauce
  • 1/2 c. Modified Butter or non-hydrogenated margarine or 1/4 c. Modified Butter and 1/4 c. prune puree
  • 1/3 c. brown rice syrup
  • 1/4 c. barley malt syrup or honey
  • 1 c. unbleached flour
  • 1 1/2 c. whole wheat pastry flour

Instructions

  1. Prepare prune puree by blending or processing prunes with enough water until smooth.
  2. In a mixing bowl, combine egg substitute, baking powder, reconstituted dry milk, and yogurt.
  3. Add the canned or fresh fruit and unsweetened applesauce to the mixture.
  4. Stir in the modified butter or margarine, or a combination of butter and prune puree.
  5. Mix in the brown rice syrup and barley malt syrup or honey.
  6. Gradually add the unbleached flour and whole wheat pastry flour, mixing until well combined.
  7. Pour the batter into a greased baking dish and spread evenly.
  8. Bake in a preheated oven at 350°F (175°C) for approximately 25 minutes or until golden brown.
