- 1/2 c. Modified Butter or non-hydrogenated margarine or 1/4 c. Modified Butter and 1/4 c. prune puree ⓘ
- 1/3 c. brown rice syrup ⓘ
- 1/4 c. barley malt syrup or honey
- 1 c. unbleached flour ⓘ
- 1 1/2 c. whole wheat pastry flour
Instructions
- Prepare prune puree by blending or processing prunes with enough water until smooth.
- In a mixing bowl, combine egg substitute, baking powder, reconstituted dry milk, and yogurt.
- Add the canned or fresh fruit and unsweetened applesauce to the mixture.
- Stir in the modified butter or margarine, or a combination of butter and prune puree.
- Mix in the brown rice syrup and barley malt syrup or honey.
- Gradually add the unbleached flour and whole wheat pastry flour, mixing until well combined.
- Pour the batter into a greased baking dish and spread evenly.
