Ingredients

  • 4 cups sifted flour
  • 2 cups sugar
  • 2 teaspoons cinnamon
  • 1 teaspoon allspice
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 sticks margarine, melted
  • 2 eggs
  • 2 cups applesauce
  • 1 cup chopped pecans (optional)

Instructions

  1. Preheat oven to 400°F.
  2. Sift and measure flour, then combine all dry ingredients in a large mixing bowl.
  3. Melt margarine and mix with eggs and applesauce until well combined.
  4. Add the liquid mixture to the dry ingredients using the well method and stir until just moistened.
  5. Fold in chopped pecans if using.
  6. Spray muffin tins with spray shortening and fill muffin cups three-quarters full.
  7. Place water in empty muffin cups to help equalize heat.
  8. Bake for 15 to 18 minutes until muffins are golden and a toothpick inserted comes out clean.
  9. Allow muffins to cool slightly before serving.
