Ingredients

  • 2 large oranges
  • boiling water
  • 8 oz. chopped dates
  • 2 tsp. baking soda
  • 2 cups sugar
  • 4 Tbsp. cooking oil
  • 2 tsp. vanilla extract
  • 2 beaten eggs
  • 4 cups all-purpose flour
  • 2 tsp. baking powder
  • 2 1/2 tsp. salt

Instructions

  1. Squeeze juice of oranges into a 2-cup measure and fill with boiling water to make 2 cups.
  2. Put orange rind through a grinder or grate and add to chopped dates.
  3. Put the date mixture in a bowl and add hot orange juice.
  4. Stir in baking soda, then sugar, oil, and vanilla.
  5. Add beaten eggs, then sifted flour, baking powder, and salt.
  6. Beat thoroughly; stir in chopped pecans.
  7. Pour batter into greased loaf pans.
  8. Bake at 350°F for about 50 minutes.
