Ingredients

  • 1 1/4 c. all-purpose flour
  • 1/2 c. sugar
  • 1/2 c. butter or margarine
  • 2 eggs
  • 1/2 c. firmly packed brown sugar
  • 1 tsp. vanilla
  • 1/8 tsp. baking soda
  • 1 c. chopped walnuts
  • 1 c. raisins or dates
  • 1/2 c. flaked coconut or oatmeal

Instructions

  1. Heat oven to 350°.
  2. Lightly grease an 8-inch square pan. Combine flour and sugar.
  3. Using a pastry blender or fork, cut in butter until the mixture resembles fine meal.
  4. Press into the greased pan. Bake for 20 minutes or just until edges are lightly golden.
  5. Meanwhile, combine eggs, brown sugar, and vanilla; beat well.
  6. Stir in baking soda, walnuts, raisins, and coconut.
  7. Spoon over hot crust; spread to cover evenly.
  8. Return to oven; bake an additional 20 to 25 minutes or until the top is set.
  9. Cool completely.
  10. Cut into 20 bars.
