  • 1 large leek, diced
  • 1 medium onion, diced
  • shiitake or regular mushrooms, chopped
  • 1/2 tsp. dill leaves
  • 2 tsp. marjoram
  • 2 sprigs parsley, chopped
  • 2 bay leaves
  • 8 cloves allspice or cloves

Instructions

  1. Place the beef in a 5-quart Dutch oven and completely cover with beer.
  2. Tie allspice, peppercorns, and bay leaves in a cheesecloth or cloth bag and add to the kettle.
  3. Add salt, marjoram, and half of the diced onion to the kettle.
  4. Simmer for 2 hours in a covered pot.
  5. Dice all vegetables including green peppers, onions, potatoes, carrots, celery, leek, and mushrooms.
  6. Add the diced vegetables to the kettle.
  7. Cover and simmer for approximately 45 minutes or until potatoes are tender.
  8. Remove the cloth bag and serve the beef and vegetables in the rolls.
