Ingredients

  • 2 eggs
  • salt to taste
  • pepper to taste
  • 3 tsp. garlic powder
  • 1 c. Italian seasoned bread crumbs
  • 1/2 c. Parmesan cheese
  • 3 chicken breasts, boned and split
  • 1/2 lb. butter or oleo
  • 1 tsp. finely chopped parsley
  • juice of 1/2 lemon

Instructions

  1. Beat eggs with salt, pepper, and 2 teaspoons garlic powder; set aside.
  2. Combine bread crumbs, 1/2 teaspoon garlic powder, and Parmesan cheese.
  3. Dip each chicken piece in egg mixture, then roll in crumb mixture.
  4. Arrange chicken pieces in a single layer in a 9 x 13-inch baking pan.
  5. Bake in a preheated oven at 375°F (190°C) for about 30 minutes or until golden brown.
  6. Meanwhile, melt butter in a skillet, add sliced mushrooms and cook until tender.
  7. Stir in lemon juice and chopped parsley; pour over baked chicken before serving.
