Instructions

  1. Heat chicken fat, pork lard, or beef fat in a large pot over medium heat.
  2. Add chopped Tasso or smoked ham, and cook until browned.
  3. Stir in chopped Andouille sausage and cook for a few minutes.
  4. Add chopped onion, celery, and green pepper; cook until vegetables are tender.
  5. Add bite-sized chicken pieces and minced garlic; cook until chicken is lightly browned.
  6. Stir in Tabasco sauce, bay leaves, salt, black pepper, and dried thyme leaves.
  7. Add peeled and chopped tomatoes, cooking until they soften.
  8. Pour in seafood stock or water and bring to a boil.
  9. Add chopped green onion, rice, dried oregano, and white pepper.
  10. Reduce heat, cover, and simmer until rice is cooked and flavors meld, about 30 minutes.
  11. Stir in tomato sauce and cook for an additional 5 minutes.
  12. Add peeled medium shrimp and cook until they turn pink, about 5 minutes.
  13. Remove bay leaves and serve hot.
