Ingredients

  • 13 1/2 oz. can pineapple chunks
  • 2 cups cubed cooked chicken
  • 1 1/2 Tbsp. minced green onion
  • 1 1/2 Tbsp. minced parsley
  • 1 1/2 tsp. curry powder
  • 2 Tbsp. lemon juice
  • 1 tsp. salt
  • 1 cup plain yogurt
  • 1/8 tsp. pepper
  • 3 avocados

Instructions

  1. Drain the pineapple, reserving 3 tablespoons of syrup.
  2. Combine the pineapple, cubed cooked chicken, minced green onion, minced parsley, curry powder, lemon juice, salt, and pepper in a bowl.
  3. In a separate small bowl, mix the yogurt with the reserved pineapple syrup.
  4. Stir one-third of the yogurt mixture into the chicken mixture.
  5. Toss the chicken mixture lightly to combine.
  6. Cut the avocados in halves and remove the seeds.
  7. Optional: peel the avocados if desired.
  8. Spoon the chicken mixture into the avocado halves before serving.
