Ingredients

  • 3 lb boneless, skinless chicken breasts
  • 1 cup white rice
  • 2 chicken bouillon cubes or granules
  • 1 package Lipton dry onion soup
  • 1 diced green pepper
  • 1/2 cup sliced almonds
  • 1 small or large can mushrooms
  • 1 can mushroom soup, undiluted
  • 2 cups water

Instructions

  1. Place dry, uncooked rice in a 9 x 13-inch pan or larger if doubling the recipe.
  2. Break up bouillon cubes or granules over the dry rice.
  3. Sprinkle dry onion soup over the rice.
  4. Add diced green pepper and mushrooms on top.
  5. Pour cold water over all ingredients.
  6. Place uncooked chicken breasts over the mixture.
  7. Dollop mushroom soup concentrate over the chicken in globs.
  8. Top with sliced almonds.
  9. Bake at 350°F for 1 1/2 hours.
