Instructions

  1. Pound chicken breasts between waxed paper to an even thickness.
  2. Season chicken with salt and black pepper.
  3. In a microwave dish, melt butter and mix with olive oil.
  4. Place chicken in the dish, coating breasts on both sides.
  5. Microwave on High for 3 minutes. Let rest for 1 minute, then turn the breasts over.
  6. Microwave again on High for 3 minutes.
