Ingredients

  • 8 small boneless chicken breasts
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 Tbsp olive or salad oil
  • 2 Tbsp butter or margarine
  • 3 Tbsp chopped fresh chives or green onions
  • juice of 1/2 lemon or lime
  • 2 Tbsp brandy or cognac (optional)
  • 3 Tbsp chopped parsley
  • 2 tsp Dijon mustard
  • 1/4 c chicken broth

Instructions

  1. Place chicken breast halves between sheets of waxed paper and pound slightly with a mallet.
  2. Sprinkle the chicken with salt and pepper.
  3. Heat 1 tablespoon of oil and butter in a large skillet.
  4. Cook the chicken over high heat for 4 minutes on each side.
  5. Transfer the cooked chicken to a warm serving platter.
  6. Add chives, lemon juice, and brandy (if used), parsley, and mustard to the pan.
  7. Cook for 15 seconds, whisking constantly, then add the broth and continue to whisk.
  8. Stir until the sauce is smooth, then whisk in the remaining oil and butter.
  9. Pour the sauce over the chicken and serve immediately.
  10. Good served with noodles and tomato sauce.
