Ingredients

  • 1 Tbsp. unsalted butter or margarine
  • 3/4 c. sliced green onions with tops
  • 1/2 c. wild rice
  • 2 c. chicken stock or low sodium chicken broth
  • 1 1/2 c. boiling water
  • 3/4 c. uncooked long grain white rice
  • 1/3 c. chopped pecans, toasted
  • 2 Tbsp. shredded fresh basil or chopped parsley

Instructions

  1. In a large saucepan, melt the butter over moderate heat.
  2. Add the sliced green onions and sauté for 5 minutes.
  3. Stir in the wild rice, coating it with butter.
  4. Pour in the chicken stock and bring to a boil, stirring.
  5. Lower the heat, cover tightly, and simmer for 1 hour, stirring occasionally.
  6. Add the boiling water and stir in the uncooked long grain white rice.
  7. Cover and steam for 20 minutes longer or until both rices are tender.
  8. Stir in the toasted pecans and shredded fresh basil or chopped parsley.
