Ingredients

  • 4 to 10 chicken breasts
  • seasoned flour
  • 3 to 4 tsp. curry powder
  • 2 green peppers
  • 1 1/2 tsp. salt
  • 1/2 tsp. thyme
  • 1 Tbsp. chopped parsley
  • 1/4 lb. toasted almonds
  • 2 onions
  • garlic salt (optional)
  • 1/2 tsp. pepper
  • 2 cans tomatoes
  • 6 c. cooked, hot rice
  • 1/8 tsp. ginger
  • shortening

Instructions

  1. Remove skin from chicken breasts.
  2. Dredge chicken in seasoned flour.
  3. Brown chicken in shortening until golden.
  4. Remove chicken from skillet and keep warm.
  5. In the same skillet, sauté chopped onions and green peppers.
  6. Add garlic salt, ginger, salt, thyme, and pepper to vegetables.
  7. Stir in chopped tomatoes and cook until heated through.
  8. Add toasted almonds and chopped parsley.
  9. Return chicken to skillet and simmer until cooked through.
  10. Serve hot over cooked, hot rice.
