Ingredients

  • 1/2 cup chopped onion
  • 1/2 cup butter
  • 1/4 cup flour
  • 2 cups milk
  • 2 cups cooked chicken
  • 1 jar mushrooms
  • 1/4 cup chopped pimento
  • 2 hard-boiled eggs
  • 1 1/2 teaspoons salt
  • 1 teaspoon paprika
  • 1/4 teaspoon pepper
  • 1 1/2 cups cooked rice
  • 1 cup grated cheese

Instructions

  1. Saute onions in 1/4 cup butter until transparent.
  2. Melt 1/4 cup butter and blend in flour; stir in milk.
  3. Cook over medium heat until thickened.
  4. Remove from heat and stir in cooked chicken, mushrooms, pimentos, sliced eggs, salt, paprika, and pepper.
  5. Spread cooked rice in the bottom of a 2-quart casserole dish.
  6. Pour chicken mixture over rice and sprinkle with grated cheese.
  7. Bake at 350°F for 30 minutes or until bubbly and browned.
