Ingredients

  • pimiento
  • pepper
  • peas (choice of)
  • water chestnuts
  • cheddar cheese
  • uncle ben rice
  • mushroom
  • onion
  • cream of celery soup
  • mayonnaise
  • chicken
  • green pepper
  • salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cook rice using chicken stock as liquid.
  3. Mix cream of celery soup with mayonnaise.
  4. Combine all other ingredients in a large bowl, add the soup mixture, and mix well.
  5. Place the mixture in a large, greased casserole dish.
  6. Bake for 30 minutes or until bubbly.
  7. Top with cheddar cheese if desired.
  8. Serve hot. Can be frozen before cooking for later use.
