Ingredients

  • 1 fryer chicken
  • 1 can Cream of Mushroom soup
  • 1 bunch shallots, chopped
  • parsley
  • 1/2 tsp salt
  • 1/2 tsp red pepper
  • 1 tsp vinegar
  • 1 small jar pimento
  • 4 envelopes unflavored Knox gelatin
  • 2 cups water
  • jalapeno peppers (optional)

Instructions

  1. Boil the chicken until tender and save the water.
  2. Debone the chicken and grind it up.
  3. Skim the fat off the chicken water and sauté the white part of the shallots in this fat.
  4. Add the ground-up chicken back into the water along with the sautéed shallots, can of Cream of Mushroom soup, pimento, and vinegar.
  5. Simmer until all the water is dissolved.
  6. Add the green part of shallots, salt, and red pepper.
  7. Melt the gelatin in hot water and pour into the chicken mixture, blending well.
  8. Pour the mixture into a mold.
  9. Refrigerate until the gelatin is set and firm.
