Chicken Lasagna Bake

Ingredients
- 8 oz lasagna noodles ⓘ
- 1 (10 3/4 oz) can cream of chicken soup ⓘ
- 1 cup canned chicken broth ⓘ
- 2 (3 oz) pkgs low fat cream cheese
- 1 cup low fat cottage cheese ⓘ
- 1/2 cup low fat sour cream ⓘ
- 1/2 cup no fat mayonnaise ⓘ
- 1/3 cup onion
- 1/3 cup green pepper ⓘ
- 1/3 cup black olives ⓘ
- 1/4 cup fresh parsley ⓘ
- 3 cups chopped cooked chicken ⓘ
- 1/2 cup fine dry breadcrumbs ⓘ
- 1 Tbsp butter ⓘ
Instructions
- Cook lasagna noodles according to package directions; drain.
- Rinse with cold water, drain again, and set aside.
- Combine cream of chicken soup and chicken broth; stir until smooth and set aside.
- In a large bowl, beat softened cream cheese, low-fat cottage cheese, low-fat sour cream, and no-fat mayonnaise with an electric mixer at medium speed for 1 minute or until smooth.
- Stir in chopped onion, chopped green pepper, chopped black olives, and chopped parsley.
- Set the cream cheese mixture aside.
- Layer half of the cooked lasagna noodles in a lightly greased 13x9-inch baking dish.
- Spread half of the cream cheese mixture over the noodles.
- Add half of the chopped cooked chicken.
- Pour half of the soup mixture over the layers.
- Repeat layers with remaining ingredients.
- Combine breadcrumbs and melted butter, then sprinkle over the top.
- Bake at 375°F for 25 to 30 minutes until bubbly and golden.
