Chicken Marimba

Ingredients

  • 4 oz. lasagna noodles
  • 1 1/2 c. cream-style cottage cheese
  • 3 c. diced cooked chicken
  • 2 c. Cheddar cheese
  • 1/2 c. grated Parmesan cheese
  • 1/2 c. chopped onion
  • 1/2 c. chopped green pepper
  • 3 Tbsp. butter
  • 1 (10 1/2 oz.) can cream of chicken soup
  • 1/2 c. milk
  • 1 (6 oz.) can mushrooms
  • 1/4 c. chopped pimento
  • 1/2 tsp. basil

Instructions

  1. Cook the lasagna noodles in a large amount of boiling water until tender.
  2. Drain the noodles and rinse in cold water to stop the cooking process.
  3. In a mixing bowl, combine the cream-style cottage cheese, diced cooked chicken, grated Parmesan, chopped onion, chopped green pepper, cream of chicken soup, milk, drained mushrooms, chopped pimento, and basil.
  4. Layer half of the cooked noodles in a greased baking dish.
  5. Spread half of the cheese and chicken mixture over the noodles.
  6. Repeat with remaining noodles and mixture.
  7. Top with shredded Cheddar cheese and dot with butter.
  8. Bake in a preheated oven at 350°F (175°C) for about 30 minutes or until bubbly and golden on top.
  9. Serve hot and enjoy.
